Flour Bakery’s Oreo Cookies

I laughed when I saw the following in the instructions for these cookies: “As soon as they [the cookies] feel firm to the touch, remove them from the oven. You can’t judge by color because they start out black. “

She wasn’t kidding.

I managed to burn my way through the first three batches and found myself hovering over the oven as my fourth and final batch was baking. Lesson learned. But at least I’m pretty good at differentiating between shades of brown now..

I love chocolate, but am I the only one who thinks that whole pieces of chocolate are too much to handle? I always sneak a Hershey’s kiss every so often (especially during Halloween and care-package time), but I always end up feeling nauseous and with a bad sticky aftertaste in my mouth. Solution? Flourless chocolate oatmeal walnut cookies! These are not only the fastest and easiest cookies I’ve ever made, but they’re super healthy to boot. Plus, no flour = more chocolate! What’s not to love?

I went to the library the other day with the intent of getting some good books to go with my family’s leather armchair and some peppermint coffee. I triumphantly came out with a copy of The Glass Castle and The War of Worlds….as well as four other books with “chocolate,” “cookie,” and some variety of “bake” in the title. Sigh.

So I settled into my armchair with a cup of peppermint coffee, a pad of post-its, and got to reading. Within minutes, I came across several recipes for chocolate crinkles, and remembered having one made by a friend’s mom a few weeks ago. The recipes were post-it-ed before you could say “fresh out of the oven.”

If you’re still looking for a chewy chocolate-y cookie, look no further — these black-and-white cookies pack a whole lot of cocoa-goodness with each bite. Sturdy and crisp on the outside, soft and chewy on the inside…no wonder I only had two to take a picture of.
