I’ve been craving Italian food all week…pizza was the perfect, and easy, solution. Just 20 minutes or so in the oven (425°F), until the crust was nice and golden, and lunch was ready.

We actually cheated a little and bought ready-made pizza dough at Trader Joe’s, and just added LOTS of toppings (spinach, onions, mushrooms,  olives, and pepperoni) and mozzerella cheese. It turned out a little soggy actually, and I think it was because we overloaded the pizza with toppings, and vegetables, in general, get watery when cooked. But it was still deliciously delicious :)

I think I’m going to make potato pizza tonight; my friend and I had some at Cambridge 1 in Harvard Square once, and it was SO GOOD. yum.
