chicken pancetta zucchini pasta

Finals time. This past few days, I’ve been living off of cereal, yogurt, crackers, frozen yogurt, and sweet potatoes, so I decided to change it up a little last night. This was, of course, before I realized that I needed every minute that I could get studying for my (only) exam on Thursday…which is also why I’m posting this recipe..when I should really be studying. Life makes so much sense sometimes. Or not. It actually only took about 25 minutes total – cooking, eating/studying, and cleaning, so I was pretty happy!

I wasn’t a huge fan of the chicken as a pasta dish; I much preferred it as a standalone, with the zucchini and potatoes on the side, but I was in the mood for pasta and did what I could.
